Finally finished a full progression on the new stones. 400 → 1k → 6k. Arm hair never stood a chance.

@Sophie ~15° per side. Aogami takes it no problem. On my softer stainless I stay at 18.

Beginner question: is a 1k/6k combo stone enough to start or do I need the 400 too?

@Yuki 1k/6k covers 95% of maintenance. The 400 is only for chips and neglected edges. Start simple — technique beats grit count.

Also @Yuki — check the review section on the Hitofuri Gyuto 240 you were eyeing. Three of us posted sharpening notes for that exact steel.
